Abstract

Penelitian ini bertujuan menganalisis peran kompetensi sumber daya manusia (SDM) dan strategi pemasaran dalam pengembangan pariwisata gastronomi serta implikasinya terhadap pertumbuhan ekonomi regional. Studi ini menggunakan metode systematic literature review (SLR) dengan pendekatan bibliometrik, yang mencakup 45 artikel terindeks dari 27 jurnal internasional dan nasional yang diperoleh melalui database Scopus untuk periode 2003–2025. Analisis dilakukan menggunakan bibliometric mapping melalui VOSviewer dan Biblioshiny untuk mengidentifikasi tren riset, kata kunci dominan, jaringan penulis, serta evolusi tema penelitian. Hasil analisis menunjukkan empat klaster tema dominan dalam literatur, yaitu food tourism, regional development, sustainability, dan marketing. Peningkatan produksi ilmiah yang signifikan terjadi setelah 2015, menandakan pergeseran fokus global menuju gastronomi sebagai strategi pembangunan daerah. Temuan utama studi ini mengungkap bahwa kompetensi SDM termasuk keterampilan pelayanan, pengetahuan budaya, dan penguasaan pemasaran digital berkorelasi kuat dengan kualitas pengalaman wisatawan dan reputasi destinasi. Selain itu, strategi pemasaran berbasis storytelling, branding kuliner lokal, dan promosi digital terbukti menjadi faktor penentu keberhasilan destinasi gastronomi dalam meningkatkan nilai ekonomi dan memperkuat identitas regional. Penelitian ini berkontribusi dengan memberikan sintesis komprehensif mengenai hubungan antara SDM, pemasaran, dan pembangunan ekonomi berbasis gastronomi dalam kerangka teoritis human capital dan destination marketing. Secara praktis, hasil studi merekomendasikan penguatan kapasitas SDM melalui pelatihan berbasis budaya lokal dan digitalisasi, serta pengembangan strategi pemasaran inovatif yang mendukung keberlanjutan ekonomi dan budaya. Studi ini juga mengusulkan agenda riset lanjutan untuk mengeksplorasi model integratif pengembangan destinasi gastronomi di berbagai konteks regional.
