Abstract

The process of making tapioca flour in small and medium industries is still largely done manually, especially in the stage of grinding cassava starch which requires great effort and a long time. This research aims to design and test a starch crushing tool using a single-phase induction motor to achieve efficient time in the starch crushing process in the production of tapioca flour. The test results show that the device is able to effectively destroy starch compared to manual tools; for 2,5 kg of starch sediment, the crushing time yields a work efficiency of up to 81.89%, for 5 kg of starch sediment the crushing time produces a work efficiency of 52.08%, and for 7 kg of starch sediment, the crushing time achieves a work efficiency of 64.70% at percentages between 70% to 100%. However, at a load of 7 kg, the device can only operate at speed settings of 80% to 100%, because at 70% the induction motor experiences overload resulting in a current spike of 6.50 A. This tool can be an efficient solution to enhance the productivity of small and medium-sized industries in the process of starch sedimentation.
